Nghiên cứu chiết dầu và thu nhận đường từ bã cà phê

Mỗi năm có khoảng 6 triệu tấn bã cà phê thải ra môi trường. Bã cà phê chứa nhiều thành phần có giá trị như polysaccharide, protein và các hợp chất phenolic nhưng chưa được sử dụng hợp lý. Mục đích của nghiên cứu này là khai thác những sản phẩm có giá trị như dầu và đường có hoạt tính sinh học từ bã cà phê, góp phần nâng cao hiệu quả kinh tế của ngành công nghiệp cà phê đồng thời góp phần giải quyết vấn đề ô nhiễm môi trường. Dầu cà phê được chiết bằng bốn phương pháp khác nhau bao gồm ngâm chiết tĩnh, Soxhlet, sử dụng sóng siêu âm và chiết xuất có hỗ trợ vi sóng. Phần bã sau khi tách dầu sẽ tiếp tục được thủy phân bằng enzyme Cellulast và Viscozyme. Dịch thủy phân được phân tích thành phần đường đơn, hợp chất phenolic tổng số và đánh giá hoạt tính chống oxy hóa. Kết quả cho thấy, phương pháp sử dụng sóng siêu âm cho hàm lượng dầu cao nhất 9,64%; dầu cà phê có tỷ trọng 0,94 kg/L; chỉ số acid 7,80 mg KOH/g; chỉ số xà phòng hóa 16,33 mg KOH/g và chỉ số este 8,57 mg KOH/g. Hiệu suất thủy phân cao nhất khi xử lý bã cà phê với 2% Viscozyme sau 24 giờ. Dịch thủy phân bã cà phê chứa 2016,4 mg/L đường khử bao gồm 464,2 mg/L mannose; 947,1 mg/L glucose và 256,3 mg/L galactose; 401,7 mg/L phenolic tổng số và hoạt tính chống oxy hóa tương đương 564,3 mg/L vitamin C. Kết quả nghiên cứu cho thấy, có thể thu nhận 96 kg dầu cà phê, 48 kg đường và 10 kg hợp chất phenolic từ 1 tấn bã cà phê khô.
