Tiềm năng probiotic và khả năng kháng Escherichia coli, Salmonella của vi khuẩn Bacillus amyloliquefaciens

Bacillus amiloliquefaciens là một vi khuẩn Gram dương sinh nội bào tử có khả năng vượt trội so với các lợi khuẩn khác được dùng trong các chế phẩm sinh học probiotic. Mục tiêu của nghiên cứu này là để đánh giá các đặc tính sinh học vi khuẩn này trong các điều kiện khắc nghiệt như nhiệt độ cao, pH thấp, muối mật, dịch dạ dày nhân tạo và kiểm tra khả năng kháng hai loại gây bệnh trên đường ruột: Escherichia coli, Salmonella. Kết quả thu được, sau 3 giờ thử nghiệm ở nhiệt độ 85oC, mật độ vi khuẩn còn duy trì là 3.05 ± 0.06 log CFU/mL (tương ứng 35,58% so với mật độ ban đầu). Trong điều kiện pH = 2.5 sau 3 giờ mật độ vi khuẩn duy trì lên đến 5,34 ± 0,04 log CFU/mL (62,43%). Với điều kiện nồng độ muối mật lên đến 0,6% sau 3 giờ mật độ vi khuẩn duy trì ở mức 5,24 ± 0,07 log CFU/mL (61,34%). Dưới sự tác động của enzyme phân hủy pepsin (0,3%), trong môi trường dịch dạ dày nhân tạo của heo con pH 4,5 ở các mức độ khác nhau, mật độ vi khuẩn vẫn duy trì ở mức 5,82 ± 0,15 log CFU/mL (63,66%) cao hơn thử nghiệm dịch dạ dày nhân tạo của heo trưởng thành (pepsin 0,3%, pH = 2.5) tương ứng 4,73 ± 0,04 log CFU/mL (55,21%) sau 3 giờ thí nghiệm. B. amiloliquefaciens còn cho thấy khả năng kháng lại các loại vi khuẩn gram âm trong nghiên cứu này như Salmonella Typhimurium ATCC 14028, Salmonella Enteritidis WHO 2014, E.coli thực địa có yếu tố bám F4, E.coli thực địa có yếu tố bám F18+Stx2e, Samonella Typhimurium thực địa và Samonella Enteritidis thực địa. Kết quả này phần nào cho thấy khả năng sử dụng vi khuẩn này trong chăn nuôi nhất là khi những quy định về hạn chế sử dụng kháng sinh tại Việt Nam.
